This is my way of preparing Dum Biryani check out the recipe <br /><br />Ingredients<br />==========<br />2 tsp red chilli powder <br />1 tsp Kashmiri chilli powder for colour <br />2 1/2 tsp Dhanya Powder <br />1 tsp jeera powder <br />1/2 tsp Turmeric <br />1/2 pepper powder <br />2 tsp salt<br />1 tsp Homemade Garam masala powder <br />1 bowl Fried onions<br />1 1/2 bowl beaten curd<br />500 grms / 2 glasses Basmati Rice<br /><br />1 cup chopped coriander <br />1/2 cup chopped pudina<br />4 green chillis<br />3 tomotos <br /><br />4 cloves <br />4 green cardamom/ ilachi<br />2 inch cinnamon/ dalchini <br />3 bay leaves <br />1 tsp jeera, mustered mix<br /><br />Preparation <br />=========<br /><br />- Slice the onions and fry them in oil till golden brown. Add a pinch of salt to make the process faster. Remove the onions and keep the oil in bowl for further process.<br /><br />- If you want to add some Aloo to the Biryani, fry the aloo pieces in the same oil and keep a side.<br /><br />- Soak basmati rice in a bowl adding water fill rice is fully covered <br /><br />Base preparation: <br />- Take tomotos, green chillis, coriander and pudina into a blender and blend to a smooth paste.<br />- Add the mixture to the hot oil in which onions are browned. And add 2 cloves, 2 ilachi, 2 inch dalchini, 2 bay leafs to the mixture.<br />- Keep stirring till oil separates from the mixture, then add the powdered masalas followed by beaten curd. Beat the curd before adding to the pan to avoid forming lumps.<br />- Cook the mixture lid on for 5 min till oil separates. Add half of the brown onions to the mixture and cook it for 3 more min.<br />- At this stage base mixture is ready which you can use for Veg Dum Biryani, Aloo Dum Biryani, Pot Biryani, Chicken biryani, Mutton Biryani any biryani.<br />- Add the fried aloo into the mixture and keep the bowl aside.<br /><br />Boil Rice<br />=======<br />- Take a big bowl full of water and add 3-4 spoons of rock salt or add salt to make the water taste like sea water.<br />- Add 2 -3 cloves, 2-3 ilachi, 1 bay leaf, 2 slit green chillis to the water and bring it to a boil.<br />- Now add socked rice and cook till 80% and lower the flame.<br /><br />Assembling<br />==========<br />- At this point take some hot water from the bowl and add it to base mixture.<br />- Spread out the rice evenly on the base mixture and add chopped coriander, mint leaves and remaining brown onions seal the bowl with foil or aata.<br />- Put a pan on flame then the sealed bowl on top of it put a weight to keep the pressure.<br />- Cook on low flame for 30min or check for the steam releases from sides. <br />- At this point switch of the flame and take of the bowl and keep the hot pan on top of it to cook it from top ( Dum )<br />- Rest it for 10 more min and serve.<br /><br /><br />Check out more recipes at https://www.crazycooks.in/<br /><br />Follow us and show your love: <br /><br />Facebook - https://www.facebook.com/crazycooks.in<br />Instagram - https://www.instagram.com/crazycooks_in/<br />Twitter - https://twitter.com/crazycooks_in<br />Pinterest - https://in.pinterest.com/crazycooks_in/
